Meatless Monday Recipe

Classic Hummus
Ingredients
1½ cups/15ounce can of chickpeas drained and rinsed
⅓ cup tahini
2 tablespoons olive oil
2 tablespoons lemon juice(I prefer fresh squeezed...zest your lemon first and you can freeze the zest for future recipes)
1 shallot(or 2 cloves garlic...I'm allergic to garlic so I use shallots to replace them in all recipes)
½ teaspoon pink himalayan salt
5 tablespoons water, or as needed to blend
Paprika for garnish
Molly B's Sourdough Crackers and/or veggies, for serving
Directions
In a high speed blender(I have a Vitamix Blender that I use for sooooo many things)
place the chickpeas, tahini, olive oil, lemon juice, shallots/garlic and salt. Use the blender baton to blend until very smooth, adding water as needed to blend, and to reach your desired consistency.
Transfer to a serving bowl and sprinkle with paprika for color and a little smoky flavor and serve with Molly B's Sourdough Crackers and/or veggies.

The sweetest little guy you will ever meet developed a seizure condition this week. I rushed him off to the doggy hospital and he is now on medication that makes him a very tipsy Danny Doodles! I'm so grateful that I now work from home so I can keep an eye on him and comfort him when scary things happen. As you can see from the picture....he isn't a fan of the baby gate that separates him from the kitchen when I am baking sourdough bread! He thinks if he lays across the threshold I might not close the gate! He is the silliest little fellow and I'm so glad he is going to be ok!
