Meatless Monday Recipe

Farro Kuri Pumpkin Risotto with Sourdough Olive Boule No Garlic Garlic Bread


Ingredients

  • 3 cups roasted and cubed Kuri Pumpkin(Or any squash or sweet potato you choose)

  • 4 tablespoons olive oil, divided

  • 1 teaspoon ground sage

  • 1/4 cup vegan butter

  • 2 shallots, minced

  • 1 1/2 cups pearled farro

  • 1/2 cup dry white wine

  • 6 cups low-sodium vegetable broth

  • 1/2 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • 1/2 cup nutritional yeast(gives a nice parmesan cheese flavor)

  • 2 teaspoons vegetable bullion


Instructions for Risotto

  • Preheat your oven to 425 Degrees F

  • Butcher your Kuri Pumpkin by cutting it in half and removing the seeds. (You can save the seeds to dry out for your garden next summer or roast them. I threw them in the compost bin one year and they grew in there and produced a bunch of pumpkins!) Slice each half into about 4 slices. Lay them on a baking sheet lined with parchment paper. Spray with olive oil and a dash of salt and pepper and bake for about 30 minutes. Poke it with a fork to make sure it is nice and soft. Depending on the thickness of your slices they may need 10 more minutes. Set aside until they are cool enough to handle. Then cut them into cubes or if they are really soft just scoop out the flesh and chop it up!

  • Pour vegetable broth into a sauce pan and warm up the broth at a low heat.

  • Heat the olive oil in a stock pot or large deep skillet to medium heat and add chopped shallots, salt, pepper, and sage. Stir constantly for 1 minute. Add in the farro and toast another minute, then add in the white wine. Cook for 5 minutes, stirring often to prevent sticking, until the wine is mostly absorbed. 

  • Add one laddle of broth and the chopped pumpkin to the farro mixture. Add the broth, a laddle at a time, stirring as it cooks, until mostly absorbed. Continue to add the broth, a laddle at a time, stirring each time until broth is mostly absorbed. You may not need all of the broth, depending on how quickly the farro cooks. When the farro is tender and creamy, remove from heat and stir in the butter and nutritional yeast. Taste, adding more salt or pepper as desired to taste. 


Instructions for No Garlic Garlic Bread

  • Cut a slice of Molly B's New Sourdough Olive Boule.

  • Generously butter your slices

  • Sprinkle with onion powder, paprika, and nutritional yeast

  • Put them in the oven under the broiler for 1-2 minutes watching carefully so they don't burn!



Molly B's Ponderings and Ramblings


Sometimes you need to bite something and throw something like a toddler! I had a DAY last week. I had a rare day with no orders to make so I decided to make some white boules and work on my scoring skills. I had just started mixing the dough for my four boules when my phone rang. The first call in a string of four phone calls that took me through what I think was my entire emotional range.

The first phone call was informing me that my dad was having an emergency surgery and having his second leg amputated. As I was hanging up the phone someone who is incredibly important to me called me to tell me all the ways I had hurt and disappointed them in the last year. I proceeded to have a panic attack and as I was calming down and able to breathe my sweet granddaughter video chatted me to thank me for the bicycle and helmet we sent her for her birthday. My final phone call was a request from someone to be the middle man and call the person who had just finished telling me how much I hurt and disappointed them that year and deliver some sad news.


Needless to say....my dough was a failure! Did I add sourdough discard? I don't know. How much water did I add? I really couldn't tell you. Is there salt in the dough? Maybe...or maybe even double! As most sourdough bakers do...I baked her up anyways. They turned into frisbee as I expected although miraculously they did have the right amount of salt in them! When my husband got home that evening I cried on his shoulder and told him my tale. Then we went outside with my frisbee bread and we took turns taking a bite of each loaf and throwing it like a frisbee across the yard. It was delicious and hilarious. A good reminder that even grown ups need to bite something and throw something once in a while!
