Meatless Monday Recipe
Scrambled Pumfu(Pumpkin Seed Tofu Soy Free from Natural Grocers or Whole Foods)
Ingredients
1 tablespoon olive oil
(1) 8 ounce block Pumfu(Pumpkin Seed Tofu from Natural Grocers or Whole Foods)
2 tablespoons nutritional yeast
1/2 teaspoon salt
Dash of pepper or more to taste
1/2teaspoon turmeric
1/2 teaspoon onion powder(garlic powder if you prefer)
1/2 teaspoon cumin
1/2 teaspoon thyme
1 small onion
1/2 yellow, red, or orange pepper
1 cup greens of your choice(I prefer bok choy)
Optional avacado slices for topping
Optional drizzle of balsamic glaze for topping
Directions
Remove Pumfu from its package and squeeze out the excess liquid over the sink. Crumble it into a bowl.
Add salt, pepper, nutritional yeast, turmeric, onion powder, and cumin and stir until combined.
Heat olive oil in a pan and add vegetables, salt, pepper, and thyme and sautee the veggies 5-10 minutes until they are soft and onions are translucent but not browning. If you use a tough green such as kale I like to add a splash of vegetable broth and put a lid on the pan to steam the kale until it softens.
Add the seasoned Pumfu and stir it into the vegetables. Let it cook about 5 more minutes stirring frequently.
Top with avacado slices and balsamic glaze. I also like topping it with microgreens when I have some on hand!
Serve with toast....Molly B's Sourdough would go great with this dish!

Molly B's Ponderings and Ramblings


As my fellow teachers and students prepare to head back to school I find myself reflecting on my last 22 years of teaching. My favorite part of returning to school was walking into a room that was a blank slate. I cast a new vision each year and created a room that would support that vision, inspire creativity, and help my students to become citizens of the world! My principals always had us select One Word that would guide our steps throughout the year. Last year mine was "shine" and my whole classroom was decorated in disco balls! It was my final One Word as an educator and a fun way to end my career!
Stepping on to my new path as a full time baker in this new season I can't help but to select that One Word that will guide my steps this year. I think it will shift and change but for now it is Create! Creating a new business, creating this blog, creating a website, creating a theme, colors, logos, recipes....the list is endless! But my soul has been longing to create and my soul is now satisfied. What will your One Word be as we enter this new season?

One last thought......Palisade Peach sourdough bread will be available on my website August 13th! I only got enough peaches to make 20 loaves and when they are gone....they are gone!
