Meatless Monday Recipe



Vegan Caramel Sauce
This quick and easy caramel sauce is creamy, delicious, and always vegan! It requires only 3 ingredients and a small saucepan. You don't even need a candy thermometer for this one! I love dipping apple slices in this vegan caramel sauce, drizzling it on ice cream, and adding it into my caramel apple sourdough boule which is hitting my website, soon!
Ingredients

1 cup coconut cream(This is different than coconut milk and can be found at Natural Grocers for about $1.50 a can. If you can't find coconut cream you can buy full fat coconut milk and skim the cream off the top saving the leftover coconut milk for a curry or smoothie)
3/4 cup brown sugar or coconut sugar
1/8 teaspoon of salt-more or less to taste
Instructions
In a small sauce pan add the coconut cream, brown sugar, and salt.
Heat over medium-high heat, stirring constantly while the coconut cream melts.
Lower the heat to a simmer and stir frequently for about 10 minutes.
Remove from heat and let it cool to the desired thickness. The longer it cools, the thicker it will get.
Store leftover caramel in a covered glass container in the refrigerator for about a week.
Molly B's Ponderings and Ramblings
Fall is officially here! I love the change of season and the fresh feelings that come with it, kind of like an opportunity for a new start! Before I retired from teaching fall meant back to school time and the deep breath before the plunge of parent teacher conferences, Halloween Parties at school, Trunk or Treat, and all that excited energy the kids brought. This fall, I am embracing cooler weather, leaf peeping in the mountains, mums on the front porch, puppy cuddles, and best of all...new fall flavors! We may even take a vacation during this special time of year because I have never been able to take a vacation during this time of year before!
I have added a few new items for you to enjoy on my website such as Sourdough Loaf Flights and my Mini Tote Bag Keychain. Coming soon is my Caramel Apple Sourdough Boule and Pumpkin Spice Boule! I'm also working on a new Chocolate Boule with a nostalgic Halloween candy flavor inside!
