Meatless Monday Recipe

Peach Bruschetta on Molly B's Sourdough Boule. Always vegan!
Ingredients for 4 Servings
1 cup cherry tomatoes, diced
1 cup peaches diced
1 tablespoon olive oil

1/4 teaspoon salt
1/4 cup honey or agave nectar
1 teaspoon apple cider vinegar
1 teaspoon hot sauce(I just put in a few shakes because I don't like a lot of spice)
vegan ricotta(Kite Hill has a good one)
Molly B's Sourdough Boule sliced and toasted
Directions
Slice and toast sourdough boule. I like to cut each slice in half as it holds the toppings better.
In a bowl, toss together tomatoes, peaches, basil, salt, and olive oil
In a separate bowl whisk together agave nectar, apple cider vinegar, and hot sauce
Take a piece of sourdough toast and spread some vegan ricotta on it. Spoon the peach mixture over the top and use a spoon to drizzle the "hot honey" over the top.
Molly B's Ponderings and Ramblings
Update! Last week I shared that my little sweet dog, Dan developed a seizure condition. My update is that he has not had another seizure and is living his best life on medication.




As my teacher pals and the students head back to school this week it has caused me to pause and ponder whether or not I am sad to not be joining them? Although I will miss seeing their faces everyday, I feel like I am on the right path for my life. Starting my home sourdough bakery isn't "easier" and I certainly don't work less hours, but I am so deeply satisfied to be building something that is mine. Every moment I work, everything I create, every mistake I make, every lesson learned and connection made are mine!
But.....I am not doing it all alone! My darling husband, Mike has completed his food safety training class so he can help me properly clean the kitchen, cut samples, put loaves in the refrigerator and many more things! He always gets up before me in the morning and turns on the oven to the correct temperature. He was out of town for a work event last week and I posted a picture on Facebook of a pile of dishes I needed to do after a big bake. A friend asked if I needed a commercial dishwasher to which I replied, " My commercial dishwasher is out of town!" He is also my accountant!
So, here's to my darling husband who works his own full time job and sometimes comes home to mass chaos. On Monday night he got home from work and came in the kitchen saying that he would handle dinner tonight. He realized I was using every counter in the kitchen for the biggest bake day yet and he turned around went into the living room and ordered food for delivery.
