Meatless Monday Recipe

Minestrone Soup in my Sourdough Bread Bowl

Soup season is upon us. It is finally supposed to be cold and rainy this coming week so I have for you one of our favorite soup recipes featured in one of my sourdough bread bowls. You can find them on my website under "Sourdough Boule" scrolling down and selecting the option "4 small boules". Then you just cut off the top, pull out the insides being careful not to tear a hole in the bottom, and fill it with your soup! My favorite part of this dish is eating the soup soaked bread bowl at the end!

This soup would also go great with my sourdough crackers! I offer 3 varieties on my website under "crackers" scroll down to the bottom of the description and select wheat, rye, or super seed!

Ingredients

  • 2 tablespoons olive oil

  • 1 medium onion, chopped

  • 2 shallots minced

  • 2 stalks celery, sliced

  • 2 large carrots, peeled and chopped

  • 1 medium zucchini, diced

  • 28 ounces canned diced tomatoes

  • 4 cups vegetable broth

  • 2 teaspoons vegetable bullion

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried thyme

  • 1 teaspoon dried basil

  • 15 ounce can small white beans, drained and rinsed

  • 15 ounce can kidney beans, drained and rinsed

  • 1/2 cup frozen or canned cut green beans

  • 1/2 cup small shell pasta or orzo

Directions

  • Heat the olive oil in a stock pot over medium heat. Add the onion, shallots, celery, carrots and zucchini and saute for 5-10 minutes, until the vegetables are tender but not browned.

  • Add the diced tomatoes and their juices, vegetable broth, dried herbs (oregano, thyme, basil), vegetable bullion, white beans, kidney beans, green beans and pasta. Stir. Bring to a boil, then lower heat the heat and simmer for 10-15 minutes, until the pasta/orzo is cooked.

  • Season with salt and pepper. Be sure to taste first as the bullion can be salt.

  • Prepare the bread bowls by cutting off the top and setting it aside for serving. Gently tear out enough bread from inside the bowl to label in soup. Careful not to rip a hole in the bottom of the bowl! Ladle the soup into the bread bowl and serve with the top and insides of the bread.

Molly B's Ponderings and Ramblings

I'm lucky in love and I'm lucky in moose sightings! My sister was visiting last weekend and we went up to Frisco to hike and see something beautiful. I told her if we were lucky we would see a moose along the trail or by the lake and the next thing I know there is a moose in someone's yard eating their tree! What does this have to do with sourdough bread? Not much....just want to encourage you to keep your youthful awe and wonder and find something you are passionate about and pursue it! Oh, and don't forget your sunglasses when you go to the mountains. Poor Mike!
