Meatless Monday Recipe

Roasted Brussel Sprouts with Toasted Walnuts
As cool weather approaches I begin to crave heartier, warmer meals. I take this as an opportunity to refresh the dinner menu and bring in a variety of foods and nutrients.
Ingredients
Fresh Brussel Sprouts
Olive Oil
Salt
Pepper
Walnuts
Instructions
Preheat oven to 400 degrees F
Peel off any discolored leaves.
Cut off the end and slice in quarters
Place them in a bowl and drizzle them with olive oil until they are shiny but not drenched. Sprinkle with salt and pepper and stir to coat.
Place on a baking sheet lined with tin foil
Bake for 15 minutes. Add walnuts to the baking sheet, stir , and cook for 10 more minutes, or until the sprouts are tender and the outsides are nicely colored. Keep checking them the last 10 minutes as they can brown quickly.
You can serve them as is or add a drizzle of balsamic glaze!
Molly B's Ponderings and Ramblings
I recently had my annual check up which includes bloodwork. My doctor (and my mother before she passed away) are always concerned if I am getting enough protein in my vegan diet since I do not take protein supplements. My bloodwork was perfect as it is every year since I adopted an entirely plant based diet. The only exception is my A1C's! Both my parents are diabetic and I have been pre-diabetic for year. On my plant based diet my A1C's have dropped from 6.0 to 5.7. 5.6 is considered normal! I was curious to see if becoming a sourdough baker and having more bread around the home as usual would spike my A1C's this year and I was pleased to see that it did not!
So where is all this protein coming from? In this simple recipe I toasted some walnuts to include in the dish. Vegetables also contain protein to my surprise! We also eat a variety of "tofu" made from different beans and seeds such as pumpkin seed tofu(Pumfu) and lentil tofu made by a local company called "Bean Boy". We also eat lentils, beans, tempeh, and seitan(a beef alternative that is cheap and easy to make). We add hemp seeds and nutritional yeast to our dishes as well as a variety of nuts and seeds.
I am not a nutritionist and I don't claim to know what is right for your body. I only know what a plant based diet has done for my health!
I put some swag up on my website. These cute tote bags hold 1-2 loaves of bread and feature my logo or my mascot, Crusty! Both designed by little old me using Cricut's Design Space!
