Meatless Monday Recipe
Vegan White Chocolate Macadamia Nut Cookies
Ingredients
-1/2 cup vegan butter softened(I prefer Natural Grocers brand but any vegan butter is fine)
-1/4 cup packed organic light brown sugar(if sugar is not organic it isn't vegan..it is purified through charred animal bones...interesting, right?)
-1/2 cup organic granulated sugar(if sugar is not organic it isn't vegan..it is purified through charred animal bones...interesting, right?)
-1/2 cup sourdough discard or flax egg(1 tablespoon ground flax+3 tablespoons water let sit for 10 minutes) or 3 tablespoons Just Egg
-1 1/2 tablespoons unsweetened plain applesauce
-1 teaspoon pure vanilla extract
-1 1/2 cups all purpose flour
-1 teaspoon baking soda
-2 teaspoons cornstarch
-1/4 teaspoon salt(I add another 1/8 teaspoon because I like them a little saltier)
-1/2 cup vegan white chocolate chips plus a little more for sprinkling on top of each cookie before baking
-1/2 cup chopped macadamia nuts (roasted will give you more crunch and raw will give you more chew)
***You can add 1 ounce of freeze dried strawberries when you add the white chocolate chips and macadamia nuts to add a fun summer flavor.
Directions
-Preheat the oven to 350 degrees F and line a cookie sheet or two with parchment paper or lightly grease.
-In a separate bowl whisk together flour, baking soda, cornstarch and salt.
-In a large bowl using a handheld mixer (or stand mixer with the paddle attachment), cream together the butter and sugars until creamy and smooth.
-Beat in the sourdough starter or egg replacement, applesauce, and vanilla until fluffy and combined.
-Stop the mixer and add the flour mixture. Turn the mixer on low speed and mix until just combined.
-Mix in the white chocolate chips and macadamia nuts until well incorporated. (If you are adding freeze dried strawberries add them now.
-Using a cookie scoop or spoon, roll into balls (about 2 tablespoons each), flatten slightly smoothing edges, and place on the prepared pans. If possible, refrigerate the balls on the pan for 30 minutes before baking.
-Stick a few white chocolate chips on each cookie.
-Bake for 9-11 minutes until they are just barely golden on the edges. Do not over bake.
-Let them cool on the pans for 5 minutes, then carefully transfer to a cooling rack. They will firm up as they cool.

My heart is filled with love and gratitude for all the folks that came out to support us at the Strawberry Stroll. I got to share my passion for sourdough bread, inventing new recipes and vegan baking with so many community members. I also heard your stories about failed sourdough starters, longings for gluten free sourdough bread, and a curiosity about vegan baking and how you make that magic happen without eggs!
I so enjoyed debuting my version of a chocolate covered strawberry and that was my first item to sell out. My friends call it "Stranger Things"...my husband calls it "Monster Ball"...but everyone agrees it was downright delicious. The best part was it was my recipe entirely from my imagination so I thank you from the bottom of my heart for giving it a try!
As we enter Palisade Peach season I hope to have a peach offering on the menu for a week or two depending on how many cases of Palisade Peaches I can get my hands on! Watch my Facebook and Instagram for current information on those items!
I also feel like the absolute luckiest woman in the world to have my husband Mike showing up for me in such big ways!
