Meatless Monday Recipe


Pumpkin Curry with Rice

Last blog post I shared a recipe for my vegan coconut caramel sauce, yum! It's the same sauce I use in my Caramel Apple Sourdough Boule. This week I'm sharing with you a recipe using the coconut milk that you will have leftover when you use the coconut cream to make the caramel sauce. I try to avoid wasting food and it often leads me to new and tasty recipes! I serve this curry over a mix of brown rice and black rice(Forbidden Rice)! You can prep it ahead of time or make sure you have an hour to let it cook!


Ingredients

  • 1 ½ Tbsp coconut oil

  • 1 medium shallot (minced)

  • 2 Tbsp minced fresh ginger(my shortcut is the tube of minced ginger from the store)

  • 1 large red bell pepper thinly sliced

  • 3 Tbsp curry powder(I make my own because I can't have cinnamon or garlic-see recipe below)

  • 3 ½ cups peeled and cubed Kuri Pumpkin or butternut squash

  • 2 (14-ounce) cans light coconut milk (I use leftover coconut milk from making caramel sauce)

  • 2 Tbsp maple syrup or coconut sugar 

  • 1 tsp ground turmeric

  • 1 healthy pinch sea salt (~1/4 tsp)

  • 1 Tbsp soy sauce

  • 1 Tsp vegetable boullion

  • 1 cup chopped broccoli(you can steam it ahead and have it ready to toss in at the end)

  • 2 Tbsp lemon juice or the juice from 1 lemon

  • 2/3 cup roasted cashews


    Rice

  • 1/2 cup brown rice

  • 1/2 cup black rice(Forbidden Rice)

  • 2.5 cups water


    Curry Powder

  • 2 Tbsp ground coriander

  • 2 Tbsp ground cumin

  • 1 1/2 Tbsp ground turmeric

  • 2 Tbsp ground ginger

  • 1 tsp dry mustard

  • 1/2 tsp ground black pepper

  • 1/2 tsp ground cardamom

  • 1/2 tsp cayenne pepper(more if you like it spicy)


Directions

  • If you haven't cooked the rice ahead of time then get it started about an hour before you want to serve your curry. Put rice and water in a sauce pan with a dash of salt and bring to a boil. Turn temperature to low and cover. Check it in 30 minutes to see if you need to add more water. Continue cooking until done to your liking. It usually takes 45-60 minutes for my blend of brown/black rice to get done.

  • Blend the curry spices together in a bowl or an empty spice jar(I save empty glass spice jars for my own spice blends)

  • Heat a large pot over medium heat. Once hot, add coconut oil, shallot, ginger, and pepper. Sauté for 2-3 minutes, stirring frequently.

  • Add bell pepper and curry powder and stir. Cook for 2 minutes more. Then add pumpkin and stir. Cook for 2 minutes more.

  • Add coconut milk, maple syrup or coconut sugar, turmeric, sea salt, and soy sauce and stir. Bring to a simmer over medium heat.

  • Once simmering, slightly reduce heat to low and cover. You want a simmer, not a boil, which should be around low to medium-low heat.

  • Cook for 10-15 minutes, stirring occasionally, to soften the pumpkin and infuse it with curry flavor.

  • Add the vegetable bullion and stir

  • Once the broth is well seasoned and the pumpkin is tender, add steamed broccoli, lemon juice, and cashews and cover. Simmer for 3-4 minutes more over low to medium-low heat.

  • Serve as is or over rice.





Molly B's Ponderings and Ramblings


Thank you to my community for coming out to Autumn Market at Gather in Brighton last Saturday. It was their first time hosting a market and they did a fabulous job! The venue is beautiful and air conditioned with indoor restrooms! That is quite a treat as most markets are outdoors and far from the facilities!

Mike and I were sporting our "Scary Scorer" and "Risen Sourdough...and Mummies" tshirts that we designed together and made using my Cricut Machine. It brought a little fun and festive feel to our booth!

I didn't have time to write a blog post last week as I was working hard to bake up 50+ loaves for the market and also help my dad get moved out of the hospital and into his assisted living home. I brought the few loaves we did not sell at market to the nursing staff at the VA Hospital that have taken such excellent care of him these last 2 weeks. They were so excited to enjoy my breads and cookies! I learned that nurses like free food as much as teachers!

I drove by my school I just retired from the other day and saw on the sign out front that Parent Teacher Conferences were happening soon! I reached out to PTO and volunteered to drop off some cookies for the teachers on the their late evening of conferences. I hope they feel the love from me, but also from the families that they serve during this important yet tiring week! Thinking of my teacher friends and sending love!
